This is a great method for getting crispy-skinned chicken wings in the oven without any added fats. Tossed in a flavorful glaze full of spice, sweetness, tanginess and freshness.
Inspired by Alton Brown who first showed me the baking powder method back in the day, and by Chef John who gave me cooking time tips for this method. Of course, this is my own spin on it, and I encourage you to do the same.
